3 Shallots
1tbMinced parsley
2tbWine vinegar
5tbSalad oil
2cRed beans, cooked, cold
  Salt & pepper to taste

Chop shallots fine, including tops. Add parsley, vinegar, and oil and season to taste. Pour over beans and pack in jars.
